Hey ya’ll! Well here I go all bored and stuff again, lol. When I’m bored, I usually do one of two things: EAT or SLEEP. After scrolling on Twitter this morning and noticing a good looking plate from @thehungryhutch, I decided to eat!
So, what I cooked this blessed Sunday was Aaron Hutcherson’s “Shrimp & Grits with Bacon.” I for the most part stayed to the recipe other than a change of the cheese and adding two seasonings. This dish was AWESOME! Mind you, last time I had shrimp and grits, it was on the menu at the Cracker Barrel, so yeah – it’s been a while.
This recipe is so easy to manage that you only need a few ingredients and I had everything I needed already at home. Again, the only things I changed was the fact that 1: I used yellow cheddar cheese rather than white cheddar, and added a dollop of cream cheese as well (to save me from having to run to the store). Secondly, I seasoned my shrimp with Tony Chachere’s Creole Seasoning as well as paprika and garlic powder.
My bacon didn’t end up looking like strips that the Hungry Hutch shows in his photos, but I think that’s only because I had cheap, thin bacon. My “strips” ended up looking more like bacon bits, but the flavor was still awesome. What was even more great was the fact that I got to pair it with my vegan-friendly mixed greens that I had just cooked the night before. Lovely combination if I may say so myself…
